I noticed that one of my most viewed posts of recent times is the Pão-de-ló de Ovar »» Ovar sponge cake
But reviewing the post I saw that I haven't shared the recipe with you, and that must be what you are looking for, right?
So as not to continue to disappoint you here is my recipe. But beware!
This cake is super difficult to do because if we remove it from the oven too soon it becomes liquid inside and you can't eat it, if we let it more time there we get a normal sponge cake , ie, dry . It's really hard to hit with the exact cooking time.
This is not to discourage you! I myself have done some that were very liquid, others dry and others ... wow simply delicious : )
But I assure you that it's always worth trying!

So here it goes:

Line a pan (without center hole) with parchment paper.

Put 6 whole eggs + 12 egg yolks in a large bowl, add 250g of sugar and beat with electric mixer for 15 minutes. (I know it seems a lot of time, but the more you beat the creamier it gets!).
After the mixture has grown quite a lot add 125g flour sifted with one teaspoon of baking powder and mix gently. That's it!
And now comes the tricky part:

Pour the mixture into the baking pan with the paper (no need to grease with butter) and bake at 180 degrees for 15 to 20 minutes.

Note that as I have said this temperature and cooking time works well for my oven, but may not work on yours. You will have to be watching the cake bake. You will know when its ready when it gets some consistency and a golden surface.
